Ingredients

  • chilled sprouted mung or other beans (3 cups)
  • large ripe tomato, cut into 1/3-inch dice (1)
  • medium red onion, cut into 1/4-inch dice (1)
  • chopped coriander leaves (1/3 cup)
  • green chili, seeded and minced (1)
  • fresh lemon juice (3 tablespoons)
  • dried mint (1 teaspoon)
  • ground cumin powder (1/2 teaspoon)
  • red pepper powder (1/8 teaspoon)
  • freshly ground black pepper (1/4 teaspoon)
  • salt (to taste)

Directions

  1. Rinse the mung beans under cold running water, drain well.



  2. In a large bowl, toss the mung beans with all of the remaining ingredients.
