Makes 4 Servings


  • 3 c (312 g) sprouted mung beans
  • 1 tomato, chopped
  • 1 red onion, finely diced
  • 1/2 bunch cilantro, chopped
  • 1 green chili, seeded and minced
  • 3 tbsp (45 mL) fresh lemon juice
  • 1 tsp (5 mL) dried mint (optional)
  • 1/2 tsp (2.5 mL) ground cumin
  • 1/8 tsp (0.6 mL) ground red pepper
  • 1/4 tsp (1.2 mL) ground black pepper
  • 1/4 tsp (1.2 mL) iodized salt

Directions

  1. Rinse the chilled mung beans under cold running water, drain well.



  2. In a large bowl, toss the mung beans with all the remaining ingredients. Adjust salt as needed.
