Makes 2 Servings

  • onion, diced (1/2)
  • red bell pepper, diced (1)
  • garlic, minced (2 cloves)
  • water (7/8 cup)
  • salt (1/4 tsp.)
  • rice (1/2 cup)
  • cooked black beans, rinsed (3/4 cup)
  • hot sauce (to taste)


  1. Over medium heat, dice and saute the onion and bell pepper in a dry pot until the onion turns a light brown color.

  2. Add the minced garlic and saute for 1 minute.

  3. Add 7/8 cup (210 milliliters) water and salt and bring the water to a boil.

  4. Add the rice, bring the water back to a boil, cover the pot, and reduce the heat to low.

  5. Cook the rice for about 20 minutes.

  6. Remove from the heat, stir in the beans, and dress the Gallo Pinto with hot sauce.
