Beans Improve the Health of People with Diabetes

People with type 2 diabetes benefit from replacing red meat with legumes (beans, peas, or lentils) in their diets, according to a study published online in the European Journal of Clinical Nutrition. In a randomized control trial, 31 type 2 diabetes participants were asked to follow either a legume-free therapeutic diet for heart disease or the same diet replacing two servings of red meat with legumes three days per week. Researchers saw improvements with the legume group in fasting blood glucose, insulin, triglyceride levels, and LDL (“bad”) cholesterol.
