Luis  Moral

Luis grew up in Spain and moved to the US in 2002. A former professor of Economics, certified project manager and, for over 15 years, a business owner.

In his mid-forties he discovered and experienced in first person the power of plants to improve health. After doctors had told him running wasn't for him, while looking for solutions he found Dr. T. Colin Campbell's "The China Study".  It opened his eyes to the relationship between the way we eat and our health. Given that his grandmother, his father, and his cousin had died of cancer, he knew what he had to do and after Thanksgiving 2016, switched to a plant based diet.

In 2023, he finally accomplished one of his dreams and ran the NYC marathon. In his mid-fifties now, continues running marathons and still keeps improving.

For some time he wanted to help others to improve their health. In 2024, he decided to take action, volunteering at his running club North Jersey Masters, volunteering with Plant Powered Metro New York, and obtaining certifications as a Health and Well-being Coach, and as a running coach.

Luis has been cooking plant-based meals for his family since 2017. Now as a licensed Food for Life instructor, Luis wants to show others that anyone can cook healthy and delicious meals to also improve their lives.
