Food for Life Instructor

Cathy began her journey of eating a vegetarian and then later a vegan diet over 35 years ago. After her retirement, she watched Forks over Knives and Game Changer and then read The China Study. This information led Cathy and her husband to adopt a low fat whole food plant based diet.
Cathy is a retired family practice and psychiatric nurse practitioner. After retirement, she completed the Forks over Knives, Essential Vegan Desserts, and Plant Based Professional courses through Rouxbe Online Culinary School. She also obtained a certificate in Plant Based Nutrition from The Center for Nutritional Studies at Cornell University.
Cathy is looking forward to helping her community become healthier.
“Most people don’t realize how the foods that they eat can impact their overall health and increase their risk for chronic diseases,” states Cathy. “I am looking forward to working with people as a Food for Life Instructor to share the life changing power of eating plants!”
