Makes 4 Servings

  • semisweet chocolate chips (1 cup)
  • nondairy milk, such as soy milk or rice milk (1 cup )
  • low-fat silken tofu, drained (2 12.3-ounce packages )
  • vanilla extract (1 tsp.)
  • strawberries, sliced (10)
  • mint sprigs for garnish, optional (10)


  1. Place all ingredients in a blender and process until completely smooth. If a sweeter mousse is preferred, add more maple syrup to taste. Spoon into small bowls and chill well before serving. Top with fresh berries of choice, if desired.
