In 2011, Sue Ellen and her husband enjoyed date night by viewing the film Forks Over Knives; documenting the effects of a whole food, plant-based diet on disease prevention and reversal. They were hooked! Eight years on, her husband is free of all medication and his ulcerative colitis is virtually gone.
Sue Ellen has enjoyed vitality and health beyond her expectations. Her arthritis has been abated and her weight has dropped significantly. Eating and experimenting in the kitchen is an adventure shared by both she and her husband. Her journey has taken her to attend a Forks Over Knives weekend immersion program; a certificate in Plant-Based Nutrition through eCornell’s T. Colin Campbell Center for Nutrition Studies and most recently a certification as a Food for Life instructor through PCRM.
Sue Ellen has chosen to embark on a mission to educate and facilitate people with the necessary tools to understand and prepare the abundance of foods/recipes the earth has to offer. In the words of Hippocrates who is considered the father of medicine; “Let food be thy medicine and medicine be thy food”.
