Food for Life Instructor

Liz Burroughs, MPH, RDN

Liz is a graduate of Central Michigan University with a BS degree in Nutrition & Dietetics and also has a Master of Public Health degree in Human Nutrition from the University of Michigan. She has worked as a Maternal, Child Health & WIC Nutritionist since 1983 & a Registered Dietitian/Nutritionist since 1985 and currently works at the Hampton-Peninsula Health District in Hampton & Newport News, VA as a WIC Nutritionist.

Her interest in plant-based eating began in graduate school. She went completely vegan/plant-based in 2016 right after listening to Dr. Neal Barnard give his lecture Dairy Products and Health Conditions at the International Conference on Nutrition in Medicine. That was really a wake-up call! Since that time, she has been dedicated to following a plant-based diet & promoting the plant-based lifestyle to everyone. She has always wanted to be a Food for Life instructor ever since she heard about the program after she attended her first ICNM. She is looking forward to teaching others about the benefits of a plant-based diet, preparing delicious vegan recipes, & incorporating the diet into their daily lives. After all, a whole-foods plant-based diet is the best diet for human health, the animals, & the planet!!
