Class Format: The class features a video lecture, cooking demo of delicious recipes, and discussion and Q&A, along with handouts of recipes participants can prepare at home. Additional resources will also be provided.

Meet your Instructor – Mindy Kursban:
Vegetarian since 1992 after learning about the cruelty inherent in meat production, her switch to veganism in 2000 was coupled with becoming the in-house attorney for the Physicians Committee, where she was involved in challenging the meat, dairy, and egg industries' influence over government nutritional recommendations. In addition to being a certified Food for Life Instructor, Mindy is honored to serve as the Chair of the Board of Directors for the Physicians Committee and a member of its President’s Council. Having personally experienced the profound impact a vegan diet has had on Mindy's health, values, and lifestyle for the better, Mindy is passionate about helping others transition to a vibrant, plant-powered lifestyle, just as she has.
