The 60-75min class features a video, discussion and Q&A, and cooking demo focused on adopting a healthful, plant-based diet.

Meet your Instructor – Mindy Kursban:
I've been vegetarian since 1992 and vegan since 2000, thanks to the support of the Physicians Committee, where I discovered the health benefits of a plant-based diet. Today, in addition to being a certified Food for Life Instructor, I serve as Chair of the Physicians Committee's Board and am a member of its President’s Council. Through my day job as an attorney for a home care company, and through my experience with my father, I’ve seen how the standard American animal-based diet leads to chronic health problems as we age. I'm passionate about helping others transition to a vibrant, plant-powered lifestyle, just as I have.
