Food Rx Using Food as Medicine:  In 1903 Thomas Edison was concerned about the healthcare of his time and stated: “The doctor of the future will give no medicine, but will interest his patient in the care of the human frame, in diet and in the cause and prevention of disease.” Today the leading causes of disease are “Lifestyle” related. At the top of the list is “poor nutrition”. Yes, most of us get an abundance of calories, but the food we eat lacks the nutrients our body needs to prevent the root causes of chronic, debilitating diseases that cost our healthcare system 3.8 trillion dollars annually. In the Food Rx: Using Food as Medicine class you will learn the current evidence-based science of how food can prevent and reverse these chronic diseases. They are not your destiny. It has been said, “Genetics loads the gun, but lifestyle pulls the trigger.” The class, designed by physicians, diabetes educators, registered dietitians, and professional chefs, offers an easy-to-follow dietary approach based on scientific research. Population studies and clinical research show that a low-fat, plant-based diet is effective at improving blood glucose levels, promoting weight loss, reducing cholesterol, and lowering the risk of diabetes and other chronic diseases (heart disease, Alzheimer’s disease, cancer and stroke) Each (hour-long) class includes: --Information on what the data says about “What is a Healthiest Diet” to prevent and reverse disease? -- Meal planning and practical cooking skills --Learning to make healthy food choices naturally low in fat, chock-full of fiber, and filled with immune-boosting antioxidants and phytochemicals. -- Cooking demonstration with tasty and easy-to-prepare recipes -- Resources and support for implementing healthy changes -- Enjoying food samples of the recipes prepared in class This class will give you what you need to be able to not only improve your own health through proper diet and nutrition, but to be able to pass that knowledge on to your family, friends and patients.
