Evidence suggests that foods can help conquer moodiness and more serious mood problems such as anxiety and depression. Studies show a dramatic improvement in depression and hostility scores, along with physical benefits, with a plant-based diet. This may happen because inflammatory foods such as dairy, meat, and eggs may trigger chemical changes in the brain. Furthermore, fruits and vegetables are anti-inflammatory. Another potential mechanism is the high-fiber content of a plant-based diet. Fiber fosters healthy gut bacteria, which release short-chain fatty acids that appear to have favorable effects in the brain. In addition to eating a plant-based diet, it is helpful to exercise regularly and get plenty of sleep. This class will demonstrate mood-boosting recipes participants can sample and easily make at home.

 

In this class, attendees learn about nutrition while asking questions and enjoying cooking demonstrations, all in a supportive online group setting.  Recipes and handouts will be provided prior to class. Pre-registration is required at least 24 hours in advance. Early Bird and Buddy Discounts are available.

Laurie Courage is a Certified Plant-Based Nutrition Educator, Health Coach and Chef and founder of Encouraging Greens Inc.. She helps people on the brink of a health crisis restore their health and enjoy an energetic life for years to come by helping them understand what and how to eat, offering both personalized health and wellness coaching programs and group nutrition/cooking classes online and on Long Island. 

 

In the 10 years since improving her own health, she has well exceeded her earlier goal to save 100 lives by studying with several plant-based leaders. She is certified in Plant-Based Nutrition, licensed as a Food For Life Educator, certified as a Starch Solution Certification Graduate and Diet and Lifestyle Intervention Practitioner, Nutrition Educator, Professional Plant-Based Chef, Certified Health and Wellness Coach, Professional Never Binge Again Coach, Healthy Teachers Program instructor and Certified Whole Food Plant-Based Certified Provider.
