Food for Life Instructor

For over a decade, Valerie has lived vegan—for personal health, as well as animal and planetary wellbeing—yet her weight was always an issue. The pounds kept creeping on year after year despite her consistent enthusiasm for jogging and Zumba. It wasn't until she understood and committed to remove processed “food” products and vegetable oils from her diet and focus on whole grains, fruits, vegetables, and legumes that she finally won her battle of the bulge. And after watching friends and family suffer from terrible diseases known to be avoidable—often reversible—by simply eating whole foods, staying silent was no longer an option. Now a certified Food For Life instructor in the Salt Lake City area and graduate of the Plant-Based Nutrition Program at Cornell University, Valerie shares her passion for compassion with her entire community through delicious nutrition education.
