Karen has worn many hats--engineer, owner of a vegetarian bed & breakfast, mystery writer--but as she learned about the relationship between food and health, she became truly inspired by plant-based cooking. She is certified in plant-based nutrition from the T. Colin Campbell Center for Nutrition Studies at eCornell, and is earning Professional Certification in Plant-Based Cooking from Rouxbe, the world’s leading online culinary school. Through her Food for Life classes, Karen teaches how plant-based is a sustainable and natural way to eat every day, with scientifically proven benefits to health and well-being.
