Two of Eric's passions in life are cycling and food. Since adopting a plant-based diet, he has increased energy and leanness to effectively complete endurance cycling events. Eric is also a professional health educator with more than 20 years of experience working on chronic disease prevention. His undergraduate and graduate degrees are related to health promotion, and he is a Master Certified Health Education Specialist (MCHES), credentialed by the National Commission for Health Education Credentialing. When it comes to plant-based food, he gets excited about growing it, cooking it, eating it, and showing others how easy it all can be.
