Elizabeth knows firsthand the challenges of struggling with weight, fatigue, and low energy. Discovering plant-based eating transformed her health and lifestyle. She embraced the abundance of foods she could enjoy without restrictions or calorie counting.
As a mother of two sports-loving children, Elizabeth balances a busy schedule while preparing nutritious, plant-based meals for her family. She especially enjoys recreating authentic Mexican dishes and has discovered how to adapt her favorite recipes to support a healthful plant-based lifestyle.
Motivated by her own transformation, Elizabeth became a licensed Food for Life Instructor through the Physicians Committee for Responsible Medicine. She now teaches monthly classes at her community hospital’s Education Department and local Library where she inspires others to explore the benefits of whole-food, plant-based nutrition and empowers them to create simple, delicious meals. Her message is clear: food is medicine, and through it, you can find hope for your health and well-being.
