Food for Life Instructor

Claudia Guillen

Claudia Guillen is a Nurse Practitioner, Diplomate of the American College of Lifestyle Medicine (DipACLM), and Certified Food for Life Instructor. She specializes in Lifestyle and Culinary Medicine and is the founder of La Comida Como Medicina, a bilingual, culturally tailored program implemented in collaboration with community organizations to empower individuals and families—particularly within Latino communities—to improve their health through plant-based nutrition, cooking skills, and sustainable lifestyle changes.

Dr. Guillen integrates clinical care with community-based education, incorporating Food for Life principles into her teaching to support the prevention and management of chronic diseases such as hypertension, diabetes, and heart disease. Her work also emphasizes the connection between nutrition and oral health, as well as women’s health, including menopause care, with a growing focus on supporting women through midlife transitions using lifestyle medicine.

She is passionate about using food as medicine, promoting plant-based nutrition, and creating supportive group environments that foster long-term health and well-being.
