Ingredients

Makes 3 Servings

  • moong bean sprouts (1/2 cup)
  • grated carrots (3/4 cup)
  • diced capsicum/peppers (green and red) (1/2 cup)
  • diced tomatoes (3/4 cup)
  • diced cucumber (1 cup)
  • chopped coriander (1 tablespoon)
  • roasted peanuts (1 tablespoon)
  • salt (to taste)
  • jaggery (1/2 teaspoons)
  • lime or lemon juice (2 teaspoons)
  • cumin powder (1/4 teaspoons)
  • red chili powder or cayenne pepper (pinch)

Directions

  1. Make the dressing in a small bowl by mixing all the dressing ingredients.



  2. In a large bowl, combine all the veggies, peanuts, salt, and dressing to taste. Serve immediately.
