Linda Oaksford
Food for Life Instructor
Linda, a retired public-school educator, found her passion in life: being a licensed Food for Life Instructor for the Physicians Committee. After reading The China Study, by Campbell & Campbell, she leaned towards being vegetarian, but after more research, and learning about the work of the Physician’s Committee she was sold on the idea of a whole-food plant-based lifestyle. Also, since keeping cholesterol levels in check was a concern, it made perfect sense. In 2021, she attained a Forks Over Knives Plant-Based cooking certificate from the Rouxbe cooking school. Now, she practices what she preaches and not only maintains a healthy diet but also exercises regularly. Spreading the word about the benefits of plant-based eating and its relationship to individual and planetary health has become her mission.
