RECIPE OF THE WEEK | Steamed Cabbage Rolls
Cabbage is in the cruciferous vegetable family which also includes broccoli, Brussels sprouts, and cauliflower. These vegetables help to eliminate excess estrogen and carcinogens from the body.
Ingredients
Makes 8 servings
1 14 oz. package tofu cabbage bean vermicelli, soaked, cut into 1/2-inch strips mushroom seasoning (optional) salt and pepper to taste
Directions
Put tofu on a clean baking sheet. Place a plate over the tofu and two cans of beans or anything else that can be used as weights to slowly push the water out of the tofu.
Crumble tofu in a small bowl. Add the black pepper, salt, and mushroom seasoning. Add bean vermicelli, mix.
Peel off whole cabbage leaves and steam in water until the leaves are softened. Drain and cool.
Cut the cabbage leaves in half along the stem and remove the stem.
Place two tablespoons of filling in each half of cabbage leaf and roll up to close. Place in a steamer for 10 minutes.
Arrange on a plate with your favorite dips.
Tip: The leftover liquid in the steamer can be used as a good soup base.
