Two New Publications Will Guide Healthy Eating Habits |

Students, parents, and teachers will be able to start the school
year off on the right foot with the release of two new PCRM nutrition
publications: The Healthy School Meal Guide and the Spanish-language
version of the Vegetarian Starter Kit.
The Healthy School Meal Guide is aimed at parents, food service
professionals, and school faculty members who want to see healthier
options in the school lunch line. The guide recommends that schools
revise their menus to include a variety of healthy foods that will
help meet national nutrition standards and comply with the local
wellness policy. Serving plant-based foods will
help schools meet nutrition recommendations, since vegetarian menu
items are high in fiber and low in total fat, saturated fat, and cholesterol.
The guide contains lots of helpful advice, including a list of
popular vegetarian menu items, such as veggie burgers and burritos,
ideas on how to create healthier versions of favorite
lunches, recipes, a sample menu for an entire school week, lists of vegetarian
commodity foods, and lists of meat analog manufacturers. The guide
also has resources for parents and teachers on how to reinforce
healthy eating habits at home and in the classroom.
The Vegetarian Starter Kit is a free resource that contains
advice on switching to a vegetarian diet, along with facts about
calcium, protein, vitamins, and dairy products. The 16-page, full-color
booklet is now available in Spanish, both online and in hard copy. PCRM will be handing out this booklet at outreach events
and to the many health care providers who need health resources
in Spanish.

because minority populations suffer disproportionately from obesity
and related diseases such as diabetes, hypertension, cardiovascular
