New Traditions: Tips and Recipes for a Vegan Labor Day
Picnic or Barbecue
The traditional Labor Day barbecue—greasy, cholesterol-packed
chicken, hamburgers, and ribs—can be a risky affair. Avoid
the carcinogens that form when meat is barbecued
and the increased risk of foodborne
illness with a healthy and
delicious vegetarian barbecue or picnic.
Here are some tips and recipes from PCRM’s nutrition staff:
Tips
- Barbecue some of the many prepared items now available such
as veggie burgers, veggie dogs, or “riblets.” Or make your
own meatless grillables from tofu, vegetable brochettes, or tempeh.
(See recipe ideas below.)
- Barbecue thick slices of marinated vegetables like eggplant,
zucchini, or tomatoes, or whole portabello mushrooms.
- Update your potato or macaroni salad by preparing it with a
vinaigrette or an egg-free mayonnaise.
- Instead of deviled eggs, offer guacamole, salsa, or hummus
with fresh-cut vegetables and baked tortilla chips.
- Serve vegetarian beans and add lower-fat veggie hotdogs to
make franks and beans.
