Dr. Neal Barnard Hosts Diabetes Lecture and Cooking Demonstration
Almost 200 people packed the AFI Silver Theatre in Silver Spring, Md., to see PCRM president Neal Barnard, M.D., discuss the power of vegan diets to reverse diabetes. Dr. Barnard was joined at the October event by local chef Robyn Webb, who demonstrated quick and simple recipes for people with diabetes.
Dr. Barnard was the lead researcher on a recent study conducted by doctors and dietitians with PCRM, George Washington University, and the University of Toronto, with funding from the National Institutes of Health. The study, published in the July issue of Diabetes Care, found that a low-fat vegan diet treats type 2 diabetes more effectively than a standard diabetes diet and may be more effective than single-agent therapy with oral diabetes drugs. Study participants on the low-fat vegan diet showed dramatic improvement in four disease markers: blood sugar control, cholesterol reduction, weight control, and kidney function.
After Dr. Barnard reviewed the study findings, guests sampled three low-fat vegan dishes prepared specially by chef Robyn Webb in front of them: Moroccan chickpea salad, Asian tofu, and Southwestern barley and corn salad.
Dr. Barnard’s new book, Dr. Neal Barnard’s Program for Reversing Diabetes, outlines the study and his new dietary approach to controlling and even reversing diabetes.
