A fabulous dessert discovery! Dark Chocolate Hummus
I discovered this recipe and adapted it to be more low fat. It's really hard to find satisfying desserts but this is surprisingly delicious.
Dark Chocolate Hummus
Serves: 8 = 2 g fat per serving
15-ounce can chickpeas or black beans (1½ cups cooked) - I prefer the black beans because it makes for a darker pudding.
1 T tahini (I reduced this from 1/4 c.)
¼ cup maple syrup or agave syrup or stevia or Xylo sweet, to taste
½ cup cocoa powder (Dutch process or dark chocolate, if desired)
1 teaspoon vanilla extract
¼ teaspoon kosher salt
2 T water
Drain the chickpeas or black beans.
Put the chickpeas or beans, tahini, sweetener of choice, cocoa powder, vanilla, kosher salt, and 2 tablespoons water into the food processor. Puree for 30 seconds, then scrape down the bowl. Taste; if necessary, add a bit more sweetener to your liking. Add additional 1 to 2 tablespoons water and puree again to come to a creamy consistency. Store refrigerated for 7 to 10 days.
Serve with fresh fruit (strawberries or other fruit to taste) or eat it like pudding.
