Risotto
Makes about 3 cups
Risotto is made with Arborio rice, which is available in natural
food stores and many supermarkets. The secret to making a wonderful,
creamy risotto is adding the liquid in small amounts and stirring
constantly.
1 onion, finely chopped
4-5 cups vegetable broth, heated
1 cup Arborio rice
Place 1/2 cup of vegetable broth in a large pot. Add onion and
cook over high heat, stirring often, until soft, about 5 minutes.
Add rice and 1/2 cup vegetable broth, stirring constantly until
it is completely absorbed. Continue adding vegetable broth, 1/2
cup at a time, stirring constantly, until rice is tender and all
liquid is absorbed.
Per 1/2-cup serving: 153 calories; 2 g protein;
31 g carbohydrate; 1 g fat; 0.5 g fiber; 345 mg sodium; calories
from protein: 7%; calories from carbohydrates: 88%; calories from
fats: 5%
