4 Day/4 Way Rice and Beans
Serves 4
Talk about a fiesta on your plate! This delicious Mexican style dish serves as a base for making a number of meals throughout the week, like vegan quesadillas, a burrito, rice and beans over a salad, and rice and beans straight up.
2 cups of brown rice, cooked
15oz can black beans, drained and rinsed
15oz can corn, drained and rinsed
1 tomato, chopped
1 onion, diced
1 green pepper, diced
½ cup fresh cilantro, chopped
1 tablespoon chili powder
Heat 2 tablespoons of water or vegetable broth in a medium sized skillet. Add diced onion and green pepper and sauté until onion is translucent. Add chili powder, corn and black beans until heated through. Combine bean and corn mixture to the warm rice, top with fresh tomato and cilantro.
