What benefits have you found in a vegan diet? (Reduced pain, higher energy levels, weight loss, etc.)

I no longer have the severe leg and joint pain I had for several years before I started my vegan diet. My mobility has improved markedly and my energy level is much higher. I have lost almost 90 pounds and am still working on this.

How did you learn about a plant-based diet, and what motivated you to change your diet?

My daughter had a vegetarian magazine that I was browsing when I visited her. It had an ad for Dr. Barnard's book about reversing diabetes. I had been having trouble living with diabetes and was feeling depressed about my general health. I read the book and changed my life style immediately, almost seven years ago. Within a couple of months, all my blood labs normalized and I was off all diabetic meds, and have been gradually able to lower and go off other meds I had been taking.

How did the Physicians Committee influence your success? (21-Day Kickstart, Kickstart Plus, Food for Life class, lecture, etc)

PCRM has been an important contact for me -- I feel like it's my support group. I use recipes from the website and read everything I get from PCRM on the internet.

What are your new favorite meals?

I love my vegan reuben sandwich for lunch. I use sprouted grain bread with my homemade low-fat hummus (just 1 tablespoon of tahini) and rinsed (to reduce sodium) sauerkraut grilled without fat in my Foreman grill. I usually have low-fat, low-sodium homemade vegetable soup with that. For dessert, I have homemade low-fat soy yogurt with frozen berries. Once in a while, I have tofu chocolate mousse or quick rice pudding (from PCRM recipes).
