Louise experienced the plant-based diet’s powerful effects on health when she was able to calm down her autoimmune condition and reverse her husband’s heart disease simply by changing the food on their plates. She felt a growing sense of responsibility to friends and family who asked “How can we do this, too?” Seeking the tools to throw a wider net, she became certified in plant-based nutrition from eCornell, expanded a career in teaching to become a Food for Life instructor, and is currently working towards a Master of Science degree in clinical nutrition.
