Crema de Frijoles Negros
(Serves 4 to 6)

Las Hada on Mexico's Pacific coast was made famous by Bo Derek and Dudley Moore in the movie 10. It is totally isolated from the surrounding Mexican countryside and culture, until you taste chef Alfredo Ponce's black bean soup—authentic and delicious. We have substituted soymilk for cream.

2-1/2 cups (1 pound) dried black beans
6-7 cups water
3 cloves garlic, crushed
1-1/2 teaspoons salt
1 tablespoon olive oil
1 cup soymilk
tortillas for garnish
lettuce for garnish

Soak beans overnight. Drain and cover with water. Add the garlic and cook until soft, about 2 hours, or five minutes in a pressure cooker. Do not undercook. Blend the beans with the cooking water and return to pot. Reheat with salt, olive oil, and soymilk. Garnish with thinly sliced fried tortillas and strips of lettuce.
