Prune Pudding
(Serves 3-4)
1 cup prunes
1 cup water
1/3 cup soymilk or rice milk
3 tablespoons carob powder
2 tablespoons maple syrup
Place prunes and water in a covered saucepan and simmer until tender,
about 20 minutes. Allow to cool slightly, then transfer the prunes
and any remaining liquid to a blender. Add remaining ingredients
and blend until completely smooth. Spoon into small serving dishes
and chill for at least 1 hour.
