Makes 6 patties
Rosti is a traditional potato dish, similar to hash browns, but
served in more generous portions and mixed, if you like, with onions,
peppers, mushrooms and more. To cut the fat in the Swiss original,
tofu and fake bacon bits easily replace the usual egg and bacon.
2 medium potatoes
1 large carrot, shredded and steamed
1/4 onion, minced
2 ounces firm tofu, crumbled
2 tablespoons fake bacon bits, such as Baco® bits
Salt, to taste
Place potatoes in a medium saucepan. Add enough water to cover
the potatoes. Bring water to a boil, reduce heat, and simmer for
approximately 45 minutes or until potatoes are easily pierced with
a fork. Drain water and allow potatoes to cool. Once cooled, peel
and grate potatoes.
In a medium bowl, mix together grated potatoes, carrot, onion,
tofu, and fake bacon bits. Shape into large patties, about 1/2-inch
thick. Add salt to taste.
Heat a large non-stick skillet. Spray liberally with cooking spray.
Add the patties and cook about three minutes on each side or until
golden brown. Serve warm.
Per serving: 74 calories; 3 g protein; 14 g carbohydrate;
1 g fat; 1.5 g fiber; 23 mg calcium; 49 mg sodium; calories from
protein: 15%; calories from carbohydrates: 73%; calories from fats:
12%
