Banana Cake

Makes about 12 pieces
This banana cake is so light that it almost floats away—it’s perfect served as a breakfast bread.

1/2 cup water
2 very ripe bananas
1/2 cup granulated or breakfast sugar
1/4 cup vegetable oil
1 teaspoon vanilla essence
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt

Preheat oven to 325°F.
Blend water, bananas, and sugar until smooth. Gradually add oil and vanilla, and blend until smooth.
Sift flour, baking soda, and salt together twice. Combine flour and blended mixture, and mix well.
Put the mixture into a greased 9-inch-by-9-inch pan. Bake for about 40 minutes, until top is golden brown. Let the cake cool before cutting.

Per serving: 165 calories; 2 g protein; 28 g carbohydrate; 5 g fat; 1 g fiber; 4 mg calcium; 202 mg sodium; calories from protein: 6%; calories from carbohydrates: 68%; calories from fats: 26%
