Asian Guacamole
Makes 4–5 cups
The ginger, cilantro, sake, and chili give this guacamole an authentic
island flare.
2 avocados, peeled, pitted, and cubed
1 small sweet onion, such as Maui or Vidalia, finely chopped
3 tablespoons fresh lime juice
3 tablespoons sake or rice wine vinegar
1 tablespoons green onion, thinly sliced
1 tablespoons cilantro, minced
1 tablespoons ginger, peeled and grated
1/4 teaspoon Thai chili oil or Thai chili paste
Combine all ingredients in bowl and mash gently enough to mix,
keeping avocados chunky. Serve in bowl with chips or quesadillas.

2 g carbohydrate; 3 g fat; 1 g fiber; 4 mg calcium; 3 mg sodium;
