Polenta with Spicy Tofu

Makes about 4 cups of sauce

This spicy tofu sauce may also be served over warmed burger buns or cooked brown rice.

4 cups cooked polenta
1 tablespoon olive oil
1 large onion, chopped
1 red or green bell pepper, finely diced
1 pound firm tofu, coarsely chopped
1 15-ounce can tomato sauce or crushed tomatoes
1 tablespoon sugar or other sweetener
2-3 teaspoons chili powder
1 teaspoon garlic granules or powder
2 tablespoons cider vinegar
1 tablespoon soy sauce
1 teaspoon stoneground mustard

Heat oil in a large pot or skillet. Add onion and bell pepper and cook until soft, about 5 minutes.

Stir in tofu and continue cooking, stirring often, 5 minutes.

Stir in tomato sauce, sugar, chili powder, garlic granules, vinegar, soy sauce and mustard. Cover and cook over medium heat, stirring frequently, 15 minutes.

To serve, spread cooked polenta onto individual plates and top with sauce.

Per 1-cup sauce with 1-cup polenta: 160 calories; 7.5 g protein; 24 g carbohydrate; 5 g fat; 3 g fiber; 406 mg sodium; calories from protein: 18%; calories from carbohydrates: 56%; calories from fats: 26%
