Quick Confetti Rice

Makes about 3 cups

This colorful rice pilaf is made with no added fat, so be sure to use a non-stick skillet.

2 tablespoons water or vegetable broth
2 cups cooked brown rice
1/2 cup frozen corn
1/2 cup frozen peas
1/2 red bell pepper, diced
1/2 teaspoon curry powder
1/4 cup golden raisins (optional)

Heat water in a large non-stick skillet. Add cooked rice, then use a spatula or the back of a wooden spoon to separate kernels.
Add corn, peas, bell pepper, curry powder, and raisins. Cook over medium heat, stirring often, until very hot, about 5 minutes.

Per 1/2-cup serving: 116 calories; 3 g protein; 26 g carbohydrate; 0.6 g fat; 3 g fiber; 105 mg sodium (if rice is cooked with salt); calories from protein: 10%; calories from carbohydrates: 85%; calories from fats: 5%
