Fat-free Banana Cake
Makes 1 Bundt cake or 1 9 x 13-inch cake (12 servings)
This cake is delicious plain, or top it with Date
Butter Frosting.
3 cups whole wheat pastry flour
1 cup wheat germ
2 teaspoons baking soda
3/4 teaspoon salt
6 ripe bananas, mashed (about 21/2 cups)
3/4 cup maple syrup
3/4 cup fortified soymilk or rice milk
2 teaspoons vanilla
1/2 cup finely chopped dates or date pieces
Preheat oven to 350°F.
Mix flour, wheat germ, soda, and salt.
In a large bowl, mash bananas and mix in maple syrup, milk, and
vanilla.
Add flour mixture, along with dates and stir to mix.
Spread into an oil-sprayed Bundt pan or 9 x 13-inch baking dish.
Bake for 55 minutes, until a toothpick inserted into the center
comes out clean.
Per serving (1/12th of cake) with frosting:
266 calories; 7 g protein; 58 g carbohydrate; 8 g fat; 3 g fiber;
301 mg sodium; calories from protein: 6%; calories from carbohydrates:
65%; calories from fats: 29%
Per serving (1/12th of cake) without frosting:
234 calories; 7 g protein; 52 g carbohydrate; 2.5 g fat; 6 g fiber;
353 mg sodium; calories from protein: 10%; calories from carbohydrates:
82%; calories from fats: 8%
