Dried Fruit Compote
Makes about 4 cup
Serve this delicious compote for breakfast on hot cereal or for
dessert with Brown Rice Pudding.
1/2 cup raisins
1/2 cup pitted prunes
1/2 cup of dried figs, halved
1/2 cup dried peaches or apricots
1/2 cup white grape juice concentrate or apple juice concentrate
Combine raisins, prunes, figs, peaches, and white grape juice concentrate
in a saucepan. Add just enough water to cover fruit.
Cover and simmer 15 minutes. Serve warm or cold.
Per 1/2-cup serving: 116 calories; 1 g protein;
30 g carbohydrate; 0.3 g fat; 2 g fiber; 3 mg sodium; calories from
protein: 4%; calories from carbohydrates: 94%; calories from fats:
2%
