Wonderful Winter Squash
(Makes 4 cups)
1 medium winter squash (butternut or kabocha, for example)
1/2 cup water
2 teaspoons soy sauce
2 tablespoons maple syrup
Slice the squash in half and then peel and remove the seeds. Cut
the squash into 1-inch cubes (you should have about 4 cups).
Place the cubes into a large pot with the water. Add the soy sauce
and syrup. Cover and simmer over medium heat for 15 to 20 minutes,
or until squash is tender when pierced with a fork.
