Tofu Spread
(Serves 7)

1 pound tofu, crumbled
1 small onion, chopped
1 carrot, grated
2 stalks celery, chopped
1/4 cup tahini
2 teaspoons lemon juice
salt to taste (optional)

Place ingredients into a food processor or blender and blend for 2 to 3 minutes. Serve spread on whole wheat bread with lettuce or sprouts.
