(Serves 6)
Let soak for 30 minutes or until water is absorbed:
1 cup boiling water
1 cup bulgur
Stir in:
1 cucumber, chopped
1 tomato, chopped
2 cloves garlic, minced
4 green onions, chopped
1 red pepper, chopped
1/2 cup parsley, minced
Mix for a dressing:
2 tablespoons olive oil
juice of 1 lemon
handful of chopped fresh basil or mint
Toss well and chill.
