Potato Pancakes
(Serves 4)
Pancakes:
4 large potatoes, grated
2 carrots, grated
1 medium onion, grated
1/4 cup chopped cilantro
1/2 teaspoon salt
2 tablespoons flour (optional)
Mix ingredients, press firmly into patties, and fry in oil, pressing
down occasionally while cooking. Turn and fry on other side. Serve
two pancakes per person, with apple sauce.
A leek can be substituted for cilantro.
Apple Sauce:
8 apples, peeled and coarsely chopped
2 cinnamon sticks
8 ounces white wine or water
Cover the bottom of a saucepan with 1/2 inch of white wine or water.
Add the apples and cinnamon sticks. Bring to a boil, then turn down
heat, and simmer 10 minutes, until the apples are almost falling
apart. Blend or mash with a fork. Sweeten with sugar if needed.
